Futurama to Stave Off Meltdown

So I'm gonna be homeless for a week because all the properties I can afford have a "no site unseen" policy about applications. I'll have to live on a couch and leave my cat behind while I find a place. Blergh. It's stressing me out.

So, I've spent the entire afternoon watching Futurama to chill out. I really like Season 5. It's humor connects with me a lot better than even the previous seasons did. However, I have two complaints about Futurama developed tonight:

1) I kind of hate Leela for hating on tubas and calling them a mistake.

2) Why do all the characters hate pineapple pizza? I love it!

There was more, but I don't remember.

Count-down to Graduation

So a couple of my friends have started posting facebook statuses of their final to-do lists before we graduate. I decided to jump on board, but my list was too long for a facebook status, so here it is.
  1. Grade correspondence portfolios for 417
  2. 15-20 page paper for 710
  3. 2000-2500 word paper for 759
  4. Masters defense
  5. Presentation for 759
  6. Research log for 759
  7. 2 feasibility reports for 759
  8. Grade 18 final reports & presentations for 417
  9. Final test for 710
  10. Grade all revisions for 417
I also have a couple readings left for 710, but they're small, so I'm not counting them. Blergh. How will I get all of this done in 2 weeks? Also, why do I still procrastinate so much 25 years into life?

Happy Easter! Sausage Souffle

So, I'm making a breakfast sausage souffle for Easter brunch. It's one of my favorite things that my mom makes. It's a heart attack waiting to happen, but I only get it once or twice a year, so no harm done.

I've reduced everything because it's just my roommate and I, and I thought I would share a version for the poor lonely souls like us who are far from family for Easter. So here's what you'll need:

What the Recipe Calls For:What I Used:
  • 8 slices of soft bread diced
  • 1 cups shredded cheddar cheese
  • 1 1/2 lbs breakfast links sausage cooked then sliced
  • 4 eggs
  • 2 3/4 cups milk
  • 3/4 tsp dry mustard
  • 1 cup mushroom soup
  • 9x13 inch glass baking dish
  • 5 slices of French bread torn up
  • 1 1/4 cups shredded cheddar cheese
  • 1 lb ground breakfast sausage (Jimmy Dean Maple flavored)
  • 3 eggs
  • 1 1/4 cups milk
  • 1/2 tsp dry mustard
  • 3/4 cup mushroom soup
  • 8x8 inch glass baking dish

Here's what you do:
  1. Preheat the oven to 300 degrees.
  2. Grease your baking dish.
  3. Cook sausage.
  4. Tear/dice bread.
  5. Beat eggs in a bowl.
  6. Mix milk, mustard, and mushroom soup in with eggs.
  7. Evenly layer the bread bits on the bottom of the baking dish.
  8. Sprinkle cheese over the bread.
  9. Evenly layer the sausage over the cheese.
  10. Spoon the egg mixture over the bread, cheese, and sausage.
  11. Bake for 1.5 hours.

Then you eat it. It's tasty. Happy Easter!

Songs of the Day by Laura Marling

It's been a while since I had a song of the day. I was listening to my gloomy and haunting favorites on itunes, and I decided that this song was a great one for the day.

Historic Mac & Cheese-y Childhood Night

Simply Recipes posted an intriguing recipe/article about Mac & Cheese. Mac & Cheese appears in cookbooks back to the1400s. My guess is the dish itself is probably older. That's a long history of yumminess.

They offer a recipe from 1861 that is really more like a guideline--oh before the days of 24 hour grocery stores. For those uncomfortable with guideline-style recipes, Simply Recipes was kind enough to morph this beauty into a modern clear-cut recipe.

Tonight, my friends and I are gathering to test the mac & cheese recipe, which means I'll be doing mostly whatever I want because they're just guidelines. I'll be making the mac & cheese, others will brings sides, appetizers, mix-ins, etc.

We've also got some lemon ice cream made at Kansas State University to finish off the evening. It tastes like this fruit dip Lindsey makes, which our friend Amy dubbed Childhood and Sunshine. I think it's an appropriate dessert for a dinner so reminiscent of childhood. Let's face it, adults don't eat much mac & cheese.

The recipe doesn't call for any sort of cream sauce, but I think I might throw one in to make it creamier like they have a nice restaurants.

Like a Donkey's Behind

So there is this fellow grad student who generally annoys me. I find in class I am generally opposed to what they think, and I'm not a very nice person at those moments because I don't really listen.

Said person just shared some personal trauma with me because I was there in an isolated space when the world seemed to be caving in.

I feel like a jerk.

This person whom I had little respect for is dealing with a much more complex and scary world than my own, and I had no right to judge because in the same shoes, I would be in much worse shape.

I rescind my prior position of general annoyance. This person is now someone I am committed to supporting, whether it be academically or with life in general. We will probably never be best friends, but I'm behind them 100%.

And while I'm not glad that person is in the position they are in. I'm glad they shared it with me because I needed a little wake-up call to get out of my self-righteous bubble. This was definitely it.

Coffee, etc. and Writing

Last night I dreamt of the most amazing coffee ever, but I don't remember what coffee brand I was told when I asked. The only coffee I can think of after said dream is at Harry's. They should serve breakfast. Of course, I couldn't afford that breakfast, but it would be good.

Speaking of budgets. I am packing a sandwich bag of cereal, a small bottle of milk, a bowl, and a spoon for my lunch today. Classy.

To the Write-in! Hours of quiet productivity where everyone is too scared to talk because they don't want to stress anyone out. It's the perfect atmosphere for productivity. Also, Rachelle makes/brings great snacks that are usually healthy. Take that crappy cereal lunch!

Also...I tried a different coffee this week, and it's weak. I will avoid Eight O'Clock in the future. Gonna buy fancy mountain coffee when I move. Hooray! I will say that Eight O'Clock coffee, while I have a hard time getting it to brew strong enough, is not an overly bitter coffee, which I like. It's a good flavor, I just can't seem to get it to brew dark enough for my tar-liking tastes.
